Peter Gordon and Paul a Young team up to create cacao menu for Chocolate Week

For Chocolate Week 2011 Peter Gordon, the godfather of fusion cuisine and Paul Young have collaborated to create a unique cacao dinner to be held at Gordon’s Marylebone restaurant, The Providores. Using chocolate from some of the world’s finest producers and pairing those with seasonal and unexpected ingredients the duo have created a 6 course menu with chocolate incorporated into each course.
The inventive pair have devised exciting methods of including chocolate such as smoking panizza over cacao nibs and creating a chocolate cocktail using Sipsmith gin. Dishes include ‘Master-stock roast duck, prune sauce, wild mushrooms, porcini powder and broad beans’ with Duffy Sheardowns award winning Honduras Indio Rojo and ‘Smoked eel, sautéed salsify, toasted sourdough crumbs and date chipotle chilli puree’ with Michel Cluizel 50% Mangaro chocolate.
The dinner will take place on Monday 10th October to launch chocolate week. Peter and Paul will host the evening, introducing the dishes and talking about the chocolate, flavour profiles and the matching of ingredients (£95 includes 6 courses, matching wines with each course, cocktail and service). It will also be held on Friday 14th October when chocolate makers Philipp Kauffman of Original Beans and Bertil Akesson of Akessons will also attend and say a few words about their chocolate and how it is made (£105 includes 6 courses, matching wines with each course, cocktail and service).
